Chicken, Rice, and Broccoli Comfort Casserole

When you need comfort food to warm your soul this recipe will leave all of your guests happy! Serve with a side salad.

Ingredients
  

  • 2 Tbsp avocado oil
  • 2 pounds chicken breasts, cut into cubes
  • 1 medium onion, chopped
  • 2 Tbsp minced garlic
  • 2 cups Jasmine rice
  • 2 cups chicken broth, no salt
  • 1 cup half-and-half
  • 2 medium heads of broccoli crowns, cut into small florets
  • 2 cups sharp cheddar cheese, shredded
  • ½ cup panko bread crumbs
  • Salt and pepper

Instructions
 

  • Heat avocado oil in a large (deep) oven-proof skillet or dutch oven over medium heat.
  • Preheat oven to 350 degrees.
  • Add two tablespoons of water and the chopped onion and chicken to the skillet and cook until the chicken is tender and you are able to cut with a wooden spoon.
  • Cook the rice in the microwave according to the package directions.
  • Add the broccoli to the skillet after the chicken is cooked and stir. Cover and let cook.
  • Once the broccoli appears bright green, add salt and pepper to your liking.
  • Once the rice is cooked, fold it into the skillet.
  • Add the half-and-half, chicken stock and shredded cheese. Stir.
  • Evenly spread out the breadcrumbs along the top and place in the oven, uncovered for 20 minutes.
