2mediumheads of broccoli crowns, cut into small florets
2cupssharp cheddar cheese, shredded
½cuppanko bread crumbs

Instructions
Heat avocado oil in a large (deep) oven-proof skillet or dutch oven over medium heat.
Preheat oven to 350 degrees.
Add two tablespoons of water and the chopped onion and chicken to the skillet and cook until the chicken is tender and you are able to cut with a wooden spoon.
Cook the rice in the microwave according to the package directions.
Add the broccoli to the skillet after the chicken is cooked and stir. Cover and let cook.
Once the broccoli appears bright green, add salt and pepper to your liking.
Once the rice is cooked, fold it into the skillet.
Add the half-and-half, chicken stock and shredded cheese. Stir.
Evenly spread out the breadcrumbs along the top and place in the oven, uncovered for 20 minutes.
