Chicken, Rice, and Broccoli Comfort Casserole
When you need comfort food to warm your soul this recipe will leave all of your guests happy! Serve with a side salad.
Ingredients
- 2 Tbsp avocado oil
- 2 pounds chicken breasts, cut into cubes
- 1 medium onion, chopped
- 2 Tbsp minced garlic
- 2 cups Jasmine rice
- 2 cups chicken broth, no salt
- 1 cup half-and-half
- 2 medium heads of broccoli crowns, cut into small florets
- 2 cups sharp cheddar cheese, shredded
- ½ cup panko bread crumbs
- Salt and pepper
Instructions
- Heat avocado oil in a large (deep) oven-proof skillet or dutch oven over medium heat.
- Preheat oven to 350 degrees.
- Add two tablespoons of water and the chopped onion and chicken to the skillet and cook until the chicken is tender and you are able to cut with a wooden spoon.
- Cook the rice in the microwave according to the package directions.
- Add the broccoli to the skillet after the chicken is cooked and stir. Cover and let cook.
- Once the broccoli appears bright green, add salt and pepper to your liking.
- Once the rice is cooked, fold it into the skillet.
- Add the half-and-half, chicken stock and shredded cheese. Stir.
- Evenly spread out the breadcrumbs along the top and place in the oven, uncovered for 20 minutes.
