Mint Mojito Mocktail Recipe
Ingredients:
- 6-10 fresh mint leaves (plus more for garnish)
- 1 tablespoon lime juice (about half a lime)
- 1 teaspoon honeysuckle syrup or maple syrup (adjust to taste)
- 1 teaspoon ginger paste
- Crushed ice
- One can of sparkling seltzer water (lemon-lime flavored works great!)
Instructions:
- In a sturdy glass, muddle the mint leaves with lime juice, ginger paste, and honeysuckle syrup until the mint is fragrant and slightly bruised. For this process, I used what I had on hand, a mason jar, and the wand from my Vitamix blender.
- Add a bit of the seltzer water and stir.
- Fill another glass with crushed ice and pour the liquid (without the mint leaves) into it.
- Pour the remaining sparkling seltzer water over the ice and stir gently to combine.
- Garnish with a sprig of mint.
- Sip, smile, and enjoy.
